Ingredients

1 Box Macoroni Elbows Dry, 16 oz
Tomato Sauce, 1 cup
Red Ripe Tomatoes, 2 cup, chopped or sliced
Smart Balance, Smart Balance Light Buttery Spread, 1 Tbsp, 2 serving
Romano Cheese, 2 oz
Basil, 1 tbsp
Garlic, 1 clove
Onions, raw, 1 cup, chopped
Directions
In a pot of boiling water, cook elblow pasta.
While pasta is cooking, chop up about 4 medium tomatos (should yeild about 2 cups); the garlic clove and 1 large onion (should yeild just under a cup).
On a med-high heat a large skillet with 2 tbsp of Smart Balance Butter, until the butter is melted.
Once the butter is melted, add the onions. Cook onions until they start to get translucent; then add the chopped tomatos. Once the chopped tomatos start to breakdown (about 4-5 minutes) , add the tomato sauce, garlic and basil . Cook for another 4-5 minutes, until there is a simmer.
Drain pasta and return to the pot. Pour tomato mixture over pasta and stir. Add Romano cheese and stir.
Service 4.
