    1/2 lb. ground chuck
    1 Tbs. canola oil
    1/2 cup chopped onion
    1/2 cup chopped celery
    1 bag frozen vegetable soup with tomatoes
    2 beef bouillon cubes
    2 cups water
    3 cloves crushed garlic
    1 bay leaf
    1 Tbs. Italian Seasoning
    1 cup brown rice


Brown ground chuck with the onions and celery in the canola oil. Add vegetable soup. bouillon cubes and water and bring to a boil. Add the garlic, bay leaf, seasoning, and rice. Return to a boil. Reduce heat and simmer, tightly covered, for and hour, stirring occasionally.
Serve with fresh whole wheat bread and a fruit.
Makes six 1 1/2 cup servings.
