Nice dressing for fruit and mixed greens salads. Nice dressing for fruit and mixed greens salads.

    1 Tbsp finely chopped shallots
    3 Tbsp sherry vinegar
    1 tsp Dijon mustard
    2 Tbsp extra virgin olive oil
    1 Tbsp honey
    freshly ground pepper
    pinch of salt (optional)


1. In a small bowl, whisk the shallots, sherry vinegar, Dijon mustard, honey, pepper and salt (if using).
2. Slowly whisk in the olive oil.

Refrigerate, to allow flavors to meld.

Serving - 1 Tbsp.
