Ingredients

    TOMATO BUTTER
    2 ounces unsalted Butter, softened
    1 Tbsp Tomato Paste
    1 tsp Red Wine Vinegar

    GRILLED ONIONS
    2 Tbsp unsalted Butter
    2 large Onions, thinly sliced

    HAMBURGER STEAKS
    2 large Egg, fresh, whole, raw
    1 1/2 pounds Ground beef, lean
    2 Tbsp Worcestershire Sauce
    70 grams Poblano Pepper, minced
    140 grams Shredded Cheddar Pepperjack Cheese
    1 1/2 Tbsp Canola Oil

Tips

Adjust the amount of poblano pepper and pepperjack cheese to suite your taste, or even change the type of pepper/cheese.


Directions

START the Tomato Butter by cutting the butter into small pieces and place in a small bowl to soften.

IN a large bowl add all the ingredients for the Hamburger Steak, except the canola oil. Mix well (I use my hands). Divide into 4 equal portions (about 250 grams each). Make into patties about 3/4 inch thick. Set aside.

HEAT a large skillet over medium heat. Add the 2 tablespoons of butter and as it starts to melt add the sliced onions. Cover. Cook for about 15 minutes, stirring every few minutes until lightly golden brown. You can add a few tablespoons of water if the onions begin to stick. When the onions are done, remove them to a bowl and cover to keep warm.

ADD the canola oil to the hot pan and then add the 4 Hamburger Steaks. Cover and cook for 6 minutes. Flip the steaks, cover and cook an additional 6 minutes.

DURING the last 6 minutes, return to the Tomato Butter. Add the tomato paste and vinegar. Mix well until all the ingredients are combined and smooth.

To serve place a Hamburger Steak on a plate. Top with 1 tablespoon of the Tomato Butter and then top that with 1/4th of the grilled onions.

Serving Size: Makes 4 steaks with 1 tablespoon tomato butter & about 1/2 cup of onions
