Introduction

Ingredients

    2.7 pounds fresh sweet red peppers
    1 cup, chopped Onions, raw
    6-8 garlic cloves, minced
    4 cups chicken broth
    2 tbsp Olive Oil
    1-2 Jalapeno Peppers
    2 bay leaves
    1-2 tsp thyme
    salt and pepper to taste

Directions

Cut sweet and jalapeno peppers in half and remove seeds and membranes. Roast on a pan under the broiler for 20-25 minutes. Put in sealed ziploc bag for 15 minutes, then remove skins. Meanwhile, gently cook onion and garlic for 15 minutes in the olive oil in a 2.5 quart or bigger pot. Add the roasted peppers, broth, spices, and jalapeno peppers. Cook for 20 minutes. Remove bay leaves. Puree.

Serving Size: Makes 7 servings at 1 cup each.
