    12 oz Great Value Boneless skinless chicken breast, diced
    1 1/2 cup Great Value Instant Brown Rice (dry)
    1 cup Broth, chicken: College Inn, Light & Fat Free, 50% less Sodium, Chicken Broth
    1/2 cup Milk, 2%,
    1/4 cup Bob's Red Mill Almond Meal/Flour
    3 Tbsp chicken scratch seasoning, divided
    4 Tbsp Bertolli EVOO, divided
    1 can Great Value Canned Sliced Carrots


You can get creative with this recipe. Try adding onions, mushrooms, green beans or peas. Use a different veggie every time and you have a different meal.


Preheat oven to 350 degrees. Spray casserole dish with olive oil cooking spray. Set aside.
Heat skillet and 2 tbsp EVOO. Once oil is heated add chicken. Add 2 tbsp chicken scratch seasoning and mix well. Cook until chicken is done. Drain if necessary and set chicken aside.
In the same skillet add remaining EVOO. Once it is heated add flour. Whisk continually until flour is browned. Add chicken broth, milk and remaining chicken scratch seasoning. Continue stirring until thickened.
Add chicken and carrots to your rue. Pour into prepared casserole dish. Cover with foil tightly. Bake for 45 minutes until rice is tender.
