Introduction
Had tons of concord grapes that a friend gave us, so tried this muffin recipe to use up 2 cups grapes. Does take time to halve and seed the grapes, but well worth it. Ingredients
-
1 1/2 cup Flour, white
1/2 tsp Baking Soda
1/3 cup Granulated Sugar
1 TBS Baking Powder
1/2 tsp salt
6 tbsp Butter, cold
3/4 cup Milk, 3.25%
2 cups Concord grapes, halved and seeded
Tips
Most of the time needed is halving and removing the seeds from the grapes.
Directions
Preheat oven to 400 degrees. Prepare regular size muffin tin. I used paper liners and think it was the best way to do them for this recipe. Grapes get quite wet when cooking.
Mix flour, sugar, baking soda, baking powder and salt in large bowl. Cut in the cold butter til only very small pieces remain. Add milk and stir with spoon. Will be VERY thick. Then add in the grapes, this makes it much looser. Spoon into prepared pan, and bake for about 20 minutes. Check with toothpick or skewer to make sure batter is cooked.
