This salad can be served at room temperature, chilled, or in a wrap. This salad can be served at room temperature, chilled, or in a wrap.
Number of Servings: 4


    2 cups of corn
    1 red pepper, chopped
    3 tbs onion, chopped
    2 avocados, cubed
    3 tbs fresh cilantro, chopped
    1 tsp extra virgin olive oil
    1 lime, juiced
    2 tbs cider vinegar
    salt & pepper to taste


Combine corn, red pepper and onion in bowl and toss with the oil
Spread onto a baking sheet and broil on high for 10 minutes, stirring several times while broiling
Combine the avocado, cilantro, lime juice and vinegar in a bowl
Add the corn mixture once it's sufficiently cooled
Season with coarsely ground salt and freshly ground pepper to taste
Serve immediately or chilled
Makes about 4 servings
