Ingredients

For the dressing:
1 Tbs soy sauce
1/2 Tbs mayonnaise
1/2 Tbs dijon mustard
1/2 Tbs honey
1/2 Tbs finely minced fresh ginger root
1 tsp rice vinegar
1/4 tsp sesame oil
1/4 tsp fish sauce
For the salad:
1 cup frozen shelled edamame
1/2 English cucumber, halved, seeded and sliced in half rounds
2 oz shredded carrots
1/2 cup fresh cilantro
2 green onions, mostly greens, chopped
Directions
Cook edamame according to package directions. Rinse with cold water and allow to cool.
Combine soy sauce, mayo, mustard, honey, minced ginger, vinegar, sesame oil, and fish sauce. Whisk well. Toss with edamame, cucumber, carrots, cilantro, and green onions.
