Ingredients

    140 grams chopped to a thick puree, drained and squeezed dry Zucchini
    1 large Egg
    2 tbsp Almond Flour
    1/4 cup Shredded Pepperjack Cheese
    1/4 tsp Kosher Salt
    1/8 tsp Crushed Red Pepper Flakes
    1 1/2 tbsp Olive Oil

Tips

I just eat them plain, but you could add a dollop of sour cream, salsa or guacamole.


Directions

CUT up the zucchini and use a food processor to create a thick puree. Scoop out the puree (try to leave as much liquid behind as possible) and place it on paper towels to drain. Transfer to several thicknesses of more paper towel and squeeze dry. When you are done you will need 140 grams of zucchini.

IN a bowl combine the dry(ish) zucchini and all the remaining ingredients, except the oil. Stir to combine.

HEAT a large frying pan over medium heat for a few minutes. Add the oil and heat for another couple of minutes. Using a medium cookie scoop (or a tablespoon) make eight equal piles and then press them into patties 2 1/2 to 3 inches in diameter. Cook for 4 minutes per side. Use additional spray oil as needed.
