    2 Tbsp. Olive Oil
    1 Onion
    3 cloves Garlic
    1 carton Mushrooms
    1 can Diced Tomatoes
    2 tsp Balsalmic Vinegar
    fresh basil, rosemary, and oregano to taste
    salt, black pepper, and red pepper to taste


Saute onions and garlic in olive oil. Add mushroom pieces and saute until al dente. Add canned tomatoes and simmer to concentrate. Add vinegar, rosemary, oregano, salt, pepper, and red pepper. Simmer. Add basil at the end.
Makes 3 1-cup servings.
