    1 tsp polyunsaturated vegetable oil or olive oil
    500g chicken breast, cut into strips or I use vegetarian type chicken
    1 med. onion, sliced
    400ml apricot nectar
    425g apricot halves (canned or peeled fresh)
    1/2 cup water
    40g pkt of apricot Chicken recipe mix


1. Heat 1 Tbsp oil in a large saucepan. Place chicken pieces in saucepan, and cook until both sides of chicken pieces are brown.
2. Add sliced onion, and cook for 2 minutes.
3. Combine the apricot nectar, water and Apricot Chicken mix in a jug and stir with a fork. Add to saucepan, and bring to boil, while stirring constantly.
4. Cover saucepan, and simmer for 25 minutes, add the apricot halves and simmer for a further 5 minutes or until chicken is cooked, stirring occasionally. Serve with rice.
