Ingredients

    2 large Egg Yolk
    4 pat (1" sq, 1/3" high) Butter, unsalted
    2 tsp Lemon Juice 'Real Lemon' 100% juice
    .25 tsp Salt
    .18 tsp Pepper, red or cayenne

Tips

Make just before poaching eggs or just as eggs are poached.


Directions

Blend egg yolks with lemon juice, salt and cayenne pepper. Use either an immersion blender or wire whisk. Blend well. Once blended, slowly pour in melted butter. Whisk/blend well while adding butter. Blend for 30 seconds if using immersion blender or 1 minute if hand whisking. The sauce will continue to thicken as it cools.
