These scrumptious peanut butter balls are like a healthier version of my 3 favorite cookies; oatmeal, peanut butter and coconut! You can always add protein powder for an extra boost of energy or even chocolate chips to make them more decadent! Ingredients

6 Tbsp Ground Flax Seed
2 Tbsp Coconut Sugar
1/2 cup Old Fashioned Oats
1/4 cup popped Quinoa
1/2 cup unsweetened Coconut Flakes
8 Tbsp Natural Peanut Butter
1 Tbsp Coconut Oil
*Unsweet, Unflavored Coconut Milk
5 Tbsp Kretschmer Wheat Germ
Tips
Have fun with this recipe and make it your own by adding/subtracting whatever ingredients you want! I like to add honey sometimes for extra sweetness. Or I'll add protein powder if I want to make them an "on the go" power snack for long days out. This recipe is super fun for the kids because they can get the hands messy by rolling the balls and coating them in wheat germ, which is packed with vitamins and minerals. Quinoa, being a superfood, also brings a lot of nutrients to the party, and fun color too! Let me know how you make this recipe your own, maybe it'll give me some fun ideas(:
Directions
1) Toast(or pop) your quinoa on the stove for a couple minutes
2) Mix together quinoa, oats, ground flax, coconut flakes, and sugar.
3) Add peanut butter and coconut oil then mix well
4) Mix in 1 tsp of coconut milk at a time until the mixture is smooth enough to form into balls
5) Form heaping 1/2 tbsp sized balls and roll them in wheat germ to coat.
6) Pop them in the fridge or freezer to harden and Viola! Bon appétit!
