Ingredients

    2 tbsp Butter, salted
    1 dash Pepper, black
    2 tsp Salt
    2 tbsp Olive Oil
    4 large (3-1/4" dia) (approx 2 per lb) Apples, fresh with skin
    2 cup, chopped Onions, raw
    2 cup Swanson Chicken Fat Free Chicken Broth Less Sodium
    1 tsp Curry powder
    8 cup, cubes Butternut Squash

Directions

Warm butter, olive oil, curry powder and onions in large pot uncovered on low for 15-20 minutes until onions are tender. Stir occasionally scraping bottom. Add chopped squash and chopped apples. pepper and broth to pan. Bring to boil and cook on low for 40-50 minutes. When apples and squash are very soft process in food processor. Serve hot with a spoon of sour cream if desired
