    1 c. butter room temperature
    1 c. sugar
    1 c. brown sugar
    4 eggs
    4 c. flour
    1/4 tsp salt
    2 tsp baking soda
    4 over ripe bananas
    1/2 c. low fat ricotta cheese
    3/4 c. raisins, I use golden
    1 c. chopped pecans I use halves and just break them with my hands we like big pieces


preheat oven to 325 degrees and grease 2 loaf pans, each loaf should yield 12 slices= 24 servings
Cream butter and sugars, add eggs 1 at a time. Sift together the dry ingredients and add 1 cup at a time, waiting till each cup is incorporated. you can add the bananas at this time, I do not mash them I just put them in chunks in the mixer, they will blend just swell. I then add the ricotta mixing till all is well blended. Add the raisins and pecans. Place in the 2 greased loaf pans and bake for 1 1/2 hours until the center is done when checked with a tooth pick or knife, Cool and enjoy in moderation. They kids love it!
