Introduction

Can be a dip with chips, or a side salad. Is best when summer veggies are at their peak! Can be a dip with chips, or a side salad. Is best when summer veggies are at their peak!
Number of Servings: 4

Ingredients

    1 large tomato (4" dia), diced
    1 Ripe avocado, diced
    2 ears fresh corn, steamed or roasted
    1 hot pepper, minced (optional)
    1 shallot, minced
    juice from one lime
    3 tbs chopped cilantro

Directions

Dice all ingredients as directed, mix together and toss with lime juice. Let sit for at least an hour to blend ingredients.

Store with plastic directly on top to help keep avocado from turining brown.

Serve with tortilla chips, or as a topping for burgers, as a side salad, etc.

Serves 4 as a dip.
