Ingredients

    0.1 cup, shredded Cheddar Cheese
    1.0 oz Mozzarella Cheese, part skim milk
    1.0 fl oz Milk, 2%, with added nonfat milk solids, without added vit A
    5.0 large Egg, fresh, whole, raw
    1.0 dash Pepper, black
    1.0 dash Salt
    0.25 cup, pieces or slices Mushrooms, fresh
    0.25 cup, chopped Green Peppers (bell peppers)
    1.0 serving Green Onion (fresh-1 stalk)
    50.0 gram butcher'selection ham - 4 slices

Directions

Spray muffin tin with non-stick cooking spray. Preheat oven to 350 degrees. Mix all ingredients in a bowl. Pour into muffin tin, 3/4 full. Place in oven and bake for 15 to 18 minutes, or until cooked through (test with a fork). Remove from oven and let cool before storing in fridge. Pop into microwave to warm up. Serving Size: Makes 8 muffins
