    1 lb Fresh Scallops
    6 Mushrooms, quartered
    1/2 C Green Bell Peppers, diced large
    1/2 C Red Bell Peppers, diced large
    1 Summer Squash, sliced in medium thin rounds
    3 Green Onoins, sliced thin
    2 Cloves Garlic, peeled and sliced thin
    1 medium tomato, seeds and pulp removed, diced small
    1 Tbs Olive Oil
    1 tsp Soy Sauce


Heat oil in pan and add mushrooms, garlic, onion and peppers. Stir and toss for 3 minutes then add squash. Continue to toss and stir for another 3 minutes. Add scallops and continue tossing and stirring for about 5 minutes or until the scallops are cooked through, but still tender. Add tomatos and stir in. Remove from heat and allow residual heat to cook the tomatos. Drain most of the liquid, add the soy sauce and stir through. Serve with brown rice. Yummy!
