    4 slices bacon, chopped
    1small onion, chopped
    2 cloves Garlic, chopped
    about 2 1/2 lb potatoes, either Yukon gold or russet
    3 cups unsalted chicken broth
    3 cups 2% milk
    1 1/2 tsp Salt
    1/4 tsp Pepper, black
    1 tsp chives, dried, or 2 tbsp fresh, chopped
    12 oz bag frozen broccoli, cooked and chopped


Cooked and cooled broccoli is easier to chop than fresh.
To add yumminess, also top with about 2 tbsp of shredded cheddar. Delightful!


Cook the bacon in a large pot or Dutch oven over medium heat until crisp, stirring occasionally, about 8 to 12 minutes. Transfer to a plate. Pour out all but 2 tbsp of the fat.

Add the onion and garlic to the fat in the pot. Cook, stirring frequently, until softened, 8-10 minutes.

Add the potatoes, broth, milk, 1 tsp salt, and the pepper and bring to a boil. Reduce the heat and simmer, stirring occasionally, until the potatoes are very soft, 40-50 minutes.

Mash most of the potatoes in the pot to thicken the soup. Add the chopped, cooked broccoli and stir. Taste to determine if more salt is needed.

Serve warm topped with reserved bacon.
