    2 tbs extra virgin olive oil
    Cooking spray
    4 garlic cloves
    1 red onion (sliced into 1/4 inch rounds)
    4 slices of 1" thick italian or french bread
    2 boneless, skinless chicken breasts (whole)
    salt and pepper to taste
    1/2 cup fresh basil
    3 tbs red wine vinegar


Combine oil and half the garlic in bowl and microwave for about a minute
Brush 1tbs oil mix on onions and grill until lightly charred about two minutes on each side (you can do this on a pan on the stovetop, too), transfer to salad bowl.
Brush bread with 1tbs oil mix and grill until crisp and golden (about 1 minutes per side). Transfer to cutting board.
Spray chicken with cooking spray and spread remaining garlic on each side (if preferred), season with salt and pepper. Grill until brown and cooked through.
Add tomatoes, basil, vinegar, to bowl with onions and toss to combine, cut bread into 3/4 inch chunks and fold into tomato mixture. Transfer chicken and tomato salad to individual plates and serve.
