Ingredients

    1 tsp. extra virgin olive oil
    1 pkg baby spinach 9 oz
    1/4 c. sliced red onion
    1 tsp. diced garlic (or 1 clove)
    1/2 lemon
    salt
    fresh ground pepper

Directions

Heat oil in skillet. Saute onion and garlic about 1-2 minutes. Add spinach and saute until wilted. Squeeze the juice of 1/2 lemon onto vegetables (strain with fingers to avoid seeds). Season with salt and fresh ground pepper. Eat immediately as it will cool quickly.
