    4 zucchinis, sliced length-wise.
    6 oz part skim ricotta - Polly O
    6 oz whipped low fat cream cheese - Philly 1/3 RF
    1.5 tsp italian seasoning
    3 cloves roasted garlic
    3/4 tsp kosher salt
    1/2 tsp black pepper
    12+ oz sauce - Newman's Own Roasted Garlic
    1 cup italian cheese blend - Kraft 2% Italian
    30 pieces of turkey pepperoni - if you leave this out, it's a vegetarian dish.


Roast zucchini in oven or grill.

Mix ricotta, cream cheese, salt, pepper, seasoning and roasted garlic.

Layer bottom of casserole dish with half the sauce. Spread each slice of zucchini with the cheese mixture and roll into a pinwheel. Place pinwheels in pan, until you have a full pan. Place a layer of turkey pepperonis on top of the pinwheels. Add more sauce, and 1 cup of italian cheese.

Bake at 350 for 40 min total. The first 30 min, cover with foil. Remove the foil for the last 10 min.
