Introduction

Ingredients

    1/3 virgin olive oil ADD LAST
    1 T apple cider vinegar
    2 T lemon juice
    1 large garlic clove, minced
    1 tsp basil
    1/4 tsp sea salt
    1 large T honey and 1/4 cup sugar ( Opt)
    3 cups rotini pasta
    1/2 c grated carrot
    1 cup broccoli florets
    1 cup cauliflower florets
    1 small sweet red pepper, chopped
    1 cup artichoke hearts, drained and chopped
    4 1/2 ounce black olives sliced
    1/2 to 1 cup crumbled feta cheese
    2 T chopped fresh dill

Directions

Mix together all the dressing ingredients and let stand at room temperature for at least 2 hours before serving the salad.
Cook the rotini according to package directions, until jutst tender. Rinse under cold water and drain well, then toss with a small amount of the dressing to keep it from sticking together. In a large bowl, combine the pasta with the remaining ingredients. Add the dressing just before seving and mixwell.
Makes 8 to 10 servings.
