Ingredients

1 cup Wheat flour, white, all-purpose, enriched, calcium-fortified
0.5 cup Whole Wheat Flour
4 tbsp *Flax Seed Meal (ground flax)
0.25 cup Quaker Oats Old-Fashioned Rolled Oats
.5 tsp Baking Powder
.5 tsp Baking Soda
.5 tsp Salt
2 tsp Cinnamon, ground
1 tsp Ginger, ground
.5 tsp Cloves, ground
.25 tsp Nutmeg, ground
.5 cup, packed Brown Sugar
1 cup Pumpkin, Canned Puree (by JULES616000)
.5 cup OIKOS Greek Yogurt Plain Nonfat
2 large Egg, fresh, whole, raw
3 tbsp Molasses
.25 cup Applesauce, unsweetened
1 tsp Vanilla
0.5 cup Cranberries, dried, sweetened (craisins)
Tips
Can add nuts or other add-ins.
Directions
Mix all dry ingredients in a bowl - flours, flax, oats, leveners, spices.
In a separate larger bowl, beat all wet ingredients until well combined - sugar, pumpkin, yogurt, eggs lightly beaten, molasses, applesauce, vanilla.
Preheat oven to 400 degrees F. Spray muffin cups with cooking spray. Stay away from the paper liner cups.
Mix dry into wet ingredients, just until combined. Add in Craisins (or raisins if preferred) and nuts (not in calculator-we prefer none).
Divide mixture among 12 muffin cups. Sprinkle with a few oats for looks. Bake in preheated oven for 15-20 minutes, until tops spring back and a skewer inserted comes out clean.
