    2 lbs sweet potatoes, raw
    1 tsp Vanilla Extract
    2 tbsp Butter, unsalted, melted
    2 tbsp Granulated Sugar
    2 tbsp Orange Juice
    1/4 tsp Nutmeg, ground
    1/4 tsp Cinnamon, ground
    1/2 cup, chopped Pecans
    1/2 cup Light Brown Sugar
    2 tbsp Butter, unsalted, room temperature


To prepare ahead, prepare recipe except for baking. Cover and refrigerate. Bring to room temperature before baking.


Heat oven to 325 degrees F. Place potatoes in a large pot and add enough water to cover. Bring to a boil and add salt if desired. Reduce heat and simmer until very soft, 20-25 minutes. Drain potatoes and return to pot. Mash potatoes. Add granulated sugar, orange juice, melted butter, vanilla, nutmeg, and cinnamon and mix well.

In a small bowl, combine pecans and brown sugar. Work room temp. butter into mixture until well combined. Spread on top of potatoes.

Bake until heated through, 15-20 minutes.
