Ingredients

    1.0 cup simply nature quinoa
    14.5 oz can fire roasted diced tomatoe
    15.5 oz can Black Beans rinsed (1/2 cup)
    1.0 cup kernels Yellow Sweet Corn, Frozen
    1.0 pepper Jalapeno Peppers
    3.0 clove Garlic
    1.0 tsp Chili powder
    0.5 tsp Cumin
    1.0 cup Vegetable Broth

Directions

In a non-stick pan sauteed minced garlic and jalapenos for about a minute. Then add the rest of the ingredients and bring to a boil. Turn down the heat to simmer for 20 minutes until the quinoa is cooked through. Top with avocado or salsa for garnish of your choice and serve immediately.
