Sauteed together, these three items are a nice, tasty side dish, rich in potassium and other important nutrients. Sauteed together, these three items are a nice, tasty side dish, rich in potassium and other important nutrients.
Number of Servings: 4

Ingredients

    2 cups yams, cubed
    1 large sweet onion
    2 cups mushrooms, sliced
    1 Tbsp. olive oil
    1/4 tsp. salt

Directions

Slice onions.
Add olive oil, yam cubes, onion slices, mushrooms and salt to sautee pan.
Cook over medium heat until yams are soft, approx. 20-30 minutes.
Cook longer if you like a more carmelized flavor.
Makes approx. 4 1-cup servings.
