Introduction

great grab and go breakfast or snack. May add raisins or other nut is desired. Omit walnuts and save 40 cal per muffin.

Ingredients

    1 cup Old Fashioned Oats(not instant)
    8 oz Almond Milk, Vanilla
    1 cup All Purpose flour
    .5 cup, packed Brown Sugar
    .5 cup Applesauce, unsweetened
    2 large Egg white, fresh
    1 tsp Baking Powder
    .5 tsp Baking Soda
    .5 tsp Salt
    1 tsp Cinnamon, ground
    1 tsp Granulated Sugar
    .5 cup, chopped Walnuts (optional)

Directions

Soak oats in milk for an hour.

In a small bowl mix cinnamon and sugar, set aside.

Preheat oven to 400 degrees

Spray muffin pan with cooking spray

Combine oat mixture with applesauce and egg whites.

In large separate bowl measure and whisk Flour, brown sugar, baking powder, baking soda, salt. Stir in nuts and raisins if using.

Add wet ingredients to dry and mix gently until just combined (over mixing will make tough peaked muffins)

Spoon into prepared muffin pan. Sprinkle cinnamon sugar mixture over top of each muffin.

Bake 20-25 minutes til done. Remove from pan, cool on rack.

Serving Size: Makes 12 muffins serving is one muffin
