Ingredients

    Egg white, 2 serving
    Applesauce, unsweetened, .125 cup
    Allspice, 1 tsp
    Nutrasweet Equal or Splenda, 1/2 cup
    Banana, fresh, 1 cup, mashed
    Pumpkin, canned, without salt, .667 cup
    *Heart Smart Bisquick (mix only), 1 cup
    *Old Fashioned Quaker Oatmeal- Plain, 1 serving
    Fiber One Cereal, 0.5 cup
    chocolate chips, semisweet, .5 cup

Directions

Preheat oven to 400 - place 12 muffin papers in muffin tin
Lightly beat egg in bowl. Add oil, allspice & sugar - mix well.
Mash banana. Add banana & pumpkin to mixture - mix well.
Fold in Bisquick - mix until smooth & no lumps are visible. Stir in chocolate chips.
Divide mixture evenly into 12 muffin papers. (Approx 2/3 full)
Bake in 400 degree oven for 15 minutes. Test with toothpick after 12 minutes. Cool in pan for 1 minute, then on cooling rack for 10 minutes prior to eating.

  • In the instructions, it states to add the oil. There is no oil in the ingredient list. Sounds like an easy and yummy recipe but need to know the amount of oil to add. - 8/20/08
