Number of Servings: 4


    3 cups chopped zucchini - about 4 medium
    1 cup chopped onion
    1/4 cup raw rice
    1 tsp oil
    1 c. nonfat vegetable broth
    2 cups water
    1 tsp curry powder
    1/2 tsp ginger
    1/2 tsp powdered mustard
    salt to taste


Heat 1 tsp oil in a nonstick soup pot. Saute onions about 5 minutes. Add rice and spices and saute 5 minutes. Add zucchini and saute 5 minutes longer, then add vegetable broth and water to cover the vegetables (about 2 cups). Bring to a boil, then lower heat and simmer about 20 minutes or until soft. Cool then put into food processor or blender by batches and "process" until smooth. Adjust salt and spices to taste.

Makes about 4 1 cup serviings.
