Ingredients

    1 tsp smoked paprika (optional)
    1 tsp Cumin Powder, Ground - 1 tsp (McCormick) ggg
    1 TBSP Avocado Oil or oil of choice
    1 cup organic canned pinto beans
    1 cup Organic Kidney Beans (110 cal)
    1 can Muir Glen Organic Diced Tomatoes Fire Roasted
    1 130 gm can roasted green chilis
    1 lb Organic ground turkey
    1 cup fresh mushrooms, sliced (I use Crimini)
    1 tsp Onion powder
    1 tsp Garlic powder
    .33 tbsp Chili powder for mild. Adjust to taste (I use chipotle)
    2.5 cup low sodium chicken stock (adjust if you want more liquid)
    Salt & Pepper to taste

Directions

Saute mushrooms in oil. Remove from pan and add turkey cooking until no longer pink. Transfer to a cooking pot (unless you started in a cooking pot). Add all ingredients including seasonings to pot and heat through. Low simmer for about 30 minutes will meld flavors. Adjust seasoning to taste.

Serving Size: Makes eight 1 cup servings
