Number of Servings: 8

Ingredients

    8 cup diced Potato, raw
    2 cup, sliced Onions, raw
    2 cup Tomatoes - sm cherry tomatoes
    20 clove Garlic
    3 cup, chopped or diced Broccoli, fresh
    3 tbsp Extra Virgin Olive Oil
    6 tsp Kosher Salt (by 65PLUS1)
    14 oz Baby Carrots Grimmway Farms (3 oz = about 10/11 baby carrots)

Directions

Wash & prepare veggies into bite sized pieces. Combine with salt, oil and toss lightly. Spread in thin layer on baking sheet(s) and roast in 400* oven for 45-50 minutes, stirring twice at equal intervals.
