Number of Servings: 6


    8 cups water
    2 chicken breast
    2 cans hunts diced tomatoes
    1 pkg. frozen mixed vegetables
    1 cup minute rice
    1 bay leaf
    3 tbs. basil, parsley
    1 cup chopped onions
    3 cloves of garlic
    1 pkg. spinach (optional)


Boil chicken, onions, garlic and seasonings until chicken is cooked. Remove chicken and cut into small pieces. Put the pieces back and add tomatoes, mixed vegetables and rice. Cook until rice is soft. Serve hot. Season to taste. Makes 6 one cup servings.
