Ingredients

8 ounces Chicken Breast (cooked), no skin, roasted
1 Cucumber (with peel) sliced (about 6 ounces)
2 tbsp chopped Red Onions, raw
2 tbsp Fresh Parsley, chopped
Dressing:
4 tbsp Extra Virgin Olive Oil
1/2 tsp Ground Cumin
1 tbsp Fresh Lemon Juice
1/8 tsp Salt
1/8 tsp Pepper, black
1/8 tsp Ground Lemon Grass (opt.)
For Sprinkling over:
1/4 cup Peanuts, dry roasted, lightly salted
Directions
Chop chicken, set aside in a bowl
Slice Cucumber, add chopped red onion and parsley. Mix together in another bowl.
I'm n a small jar, mix together the Dressing ingredients and shake well. Mix 2 tbsp of the dressing into the chicken.
Mix the rest of the dressing into the cucumber salad.
Then, using 2 plates, put half of the cucumber salad on each plate. Top each with half the chicken salad. Sprinkle each plate with 2 tbsp. dry roasted peanuts.
Serving Size: Divide recipe in half
