    1 med - lg yellow pepper
    1 med-lg red pepper
    1 med. sweet onion
    2 cups sliced mushrooms
    1 can (2 cups) white beans
    1 can (2 cups) pinto beans
    1 pkg lawrys fajita mix
    1 cup arugula
    whole wheat tortilla 6-8


makes 6-8 small burritos
Heat beans in seperate pan. Set aside
stir fry peppers, onion, then add mushrooms stif fry, then add fajita mix according to package. mix well, then add arugula and beans, mix well done when arugula is wilted.

serve with tortilla or with rice.
