    1 lemon
    1 TBSP Olive Oil
    1/2 tsp Sea Salt
    1/4 tsp coarsely ground black pepper
    4 Boneless, Skinless Chicken Breasts
    2 Medium Yellow Summer Squash
    2 Medium Zucchini
    1/4 cup snipped fresh chives
    Grilled lemon slices for garnish


1. From lemon, grate 1 TBSP peel and sqeeze 3 TBSP juice. In small bowl, whisk together lemon peel & juice, oil, salt, and pepper. Transfer 2 TBSP and reserve.

2. Add chicken to bowl with lemon juice marinade; cover and let stand 15 minutes at room temperature or 30 minutes in the refrigerator. (Meanwhile prepare grill.)

3. Discard chicken marinade. Place chicken and squash/zucchini on hot grill rack. Cover grill and cook for 10 to 12 minutes or until juices run clear, turning chicken and squash/zucchini over once and removing any pieces as they are done.

4. Transfer chicken and squash/zucchini to cutting board. Cut chicken into 1 to 2-inch wide strips; cut each squash/zucchini into wedges.

5. To serve, on a large platter, toss squash/zucchini with reserved lemon juice marinade, then toss with chicken and sprinkle with chives. Garnish with grilled lemon slices.
