    4.0 cup Cauliflower, raw
    15.5 oz can Black Beans rinsed
    1/2 cup red pepper diced
    1/2 cup, chopped Onions, raw
    4 clove Garlic
    3 tbsp pickled jalapeno slices
    1/4 tsp Cayenne Pepper (Ground)
    Salt to taste
    Pepper, black to taste
    1/2 cup Cilantro finely chopped


Cut the cauliflower into large florets chopping off thick stems. Place in a food processor and chop until it's the consistency of rice. Set aside. In a non-stick pan sautee the garlic for about a minute until it becomes fragrant. Add the onions and saute until they become translucent. Add the cauliflower rice and generously salt and pepper the mixture. Add the Cayenne and cook for about 5 to 7 minutes until the cauliflower is cooked but not mushy. Add to jalapenos. Then add the black beans and cook for another 2 minutes and add the chopped cilantro and cook until cilantro is wilted.

Serving Size: About 4 servings.
