Introduction
This is a great casserole for getting in your veggies, and using up your veggies before they go bad. I prepare a couple chicken breast in the crockpot each week to throw into different recipes. this is one of them. Ingredients

74 gram(s) bell pepper, red, sweet, raw
1 pepper, large (3-3/4" long, 3" Yellow Peppers (bell peppers)
1 serving 1 Med. Green Bell Pepper
1.5 cup, sliced Zucchini
24 ounces Chicken Breast (cooked), no skin, roasted
6 serving Cheese - Laughing Cow - Garlic Herb Light x 1 Wedge
2 tbsp Butter, salted
.5 cup, shredded Cheddar Cheese
2 serving 5 Whole Wheat Ritz Crackers (1 Serving) or 15 grams
.25 cup (8 fl oz) Chicken Broth
Tips
Use any veggies you want, but if you choose starchy veggies be sure to adjust your calories.
Directions
preheat oven to 350, spray a casserole dish with cooking spray.
Next cut and dice all veggies and mix together in a large bowl
then add in chicken and stir as well. Pour into casserole dish.
3rd step --For the sauce combine butter, laughing cow cheese, and broth. Microwave until melted, then pour over veggies and chicken.
4th sprinkle cheddar cheese over top, then crush crackers and sprinkle on top as well.
Cover and cook for 20 minutes.
Great served with a roll.
