Ingredients

    2 cup Chicken Breast - Chopped or Diced
    1.5 quart Milk, 2%, with added nonfat milk solids, without added vit A
    5 tbsp Butter, salted
    1.5 cup Flour - Gold medal all purpose flour
    5 oz Velveeta Cheese Spread
    2 cup Green Chili Peppers, canned
    4 cup (8 fl oz) Water, tap

Tips

This is a tasty cream soup that is filling. It's great on a cold day! We make this soup quite often, so when I buy chicken breast I always boil a few pounds, so that I can dice it and have it on hand. It cuts down on the prep time!


Directions

If you do not have prepared chicken you will have to boil some chicken breast and then dice it. I usually have some already diced in the freezer.

In a pan add water, chili, chicken, chicken base (1 oz) and salt and pepper to taste.

In a separate pan melt butter. Then add the flour to make a roux. Slowly stir in milk to avoid lumps. Add velveeta and then add the water, chili, and chicken to the milk mixture. Serve hot.
