Ingredients

    1.5 C Brown Sugar, .25C Apple Butter, .25C Butter, 1/2 t Salt, 2 Eggs
    2 C Whole Wheat Flour, 1/2 t Baking Soda, 1 T Orange Juice
    4 T PB2, 1 C Pecans, 1 C Dried Fruit, 1 C Bittersweet Chocolate Chips, 3 mashed Bananas

Directions

cream together Apple Butter, Butter and Brown Sugar. Add baking soda to orange juice, add to creamed butter/sugar. Mix in salt, Eggs, bananas, pb2 and flour. Stir in by hand nuts, dried fruit and chips. Makes three small loaves, or one big loaf. cut into 1 inch pieces. Bake 350 for 45 minutes if using small loaf pans, 1 hour using 1 large loaf pan

    pb2 is a powdered peanut butter, you just mix a little water and stir, and it makes a healthy pb, but you have to order it on line. - 6/28/08
