Ingredients

    1 large Egg, fresh, whole, raw
    2 oz Cream Cheese
    1.5 tsp Pure Lemon Extract (by MOKONA)
    1 tsp Vanilla Extract
    1 serving 100% Whey Protein "GNC Pro Performance" Vanilla or Chocolate Powdered Drink Mix
    4 tbsp Heavy Whipping Cream
    .25 cup (8 fl oz) Water, tap
    .25 tsp Baking Powder
    1.25 cup, unthawed Blueberries, frozen (unsweetened)

Tips

Read label to protein powders because different brands have different carbs content.
Unflavored protein powder can be used.
Switch up other frozen fruits: cherries, strawberries & experiment with chocolate flavored protein powder for variety.


Directions

Whip cream and vanilla together, place in a sieve over a bowl and refrigerate until ready to serve.

Add 2 TB water to each cocotte and then add in 1/2 blueberries.

Microwave cream cheese 15-20 until very soft.

Whisk egg and lemon extract into the cream cheese until well blended.

combine protein & baking powders then stir into egg mixture. Blend until smooth.

Pour batter over berries and bake 12-15 minutes. The crust will be golden--do not burn.

Allow to cool 10 minutes or so and then top with whipped cream.

Enjoy
