    6 c cauliflower florets
    1 tbsp butter
    2 tbsp flour
    1/2 tsp dry mustard
    1 1/4 c low fat milk
    1 c reduced fat Swiss Cheese grated
    1/4 pepper
    1/2 corn flake type cereal crumbs (or breadcrumbs)
    2 tsp melted butter


Preheat oven to 375F
Cook cauliflower - 3-4 min - drain and place in prepared baking dish
In another saucepan, melt butter over medium heat; stir in flour and mustard. Whisk in milk and cook. stir constantly, until mixture boils and thickens. Remove from heat; stir in cheese. Add pepper - pour over cauliflower
Combine crumbs, butter and sprinkle over top of mixture - bake in preheated over for 10 - 15 minutes
