Introduction

This dish can be served warm or cold. As an appetizer, side dish or entree. I have taken out the olive oil and bread crumbs to reduce fat and carbs. I prefer the taste of sharp parmesan, but you can further reduce by using the low fat version. This dish can be served warm or cold. As an appetizer, side dish or entree. Ingredients

    2 Packages of Frozen Chopped Spinach completely thawed and squeezed dry of excess liquid
    1 Cup of 2% Cottage Cheese
    1 Cup of Parmesan Cheese grated or shredded
    3 eggs

Directions

Mix all ingredients in a bowl (reserve 1/4 cup of the cheese.

Spray Pam into a glass pyrex dish bottom and sides. (The smaller the pan the thicker the frittata. If you like it thin then use a larger pan. I've used 8x8, 11x7 and my favorite a 9 1/2 pie pan) Spread the mixure evenly. Sprinkle with remaining cheese.

Cook @ 350 for approx. 40 minutes until golden brown on top and slightly firm to the touch. The size of your pan will change the cooking time. Your nose will tell you when it's ready. A toothpick test should be slightly moist.

Serve with watermelon or other fresh fruit to compliment the sharp parmesan flavor.

Depending on the pan you choose....should make 8 servings.
