    3 T olive oil
    2 large onion
    1 chicken bouillon cube
    garlic or may use garlic powder
    6 cups African egg plant (or 3 American egg plants)
    1 regular can spinach (404 can, 395 gm)


Peel and boil the eggplant. Set aside.
Fry onions, garlic, in olive oil. Add bouillon cube.
Add canned spinach (without extra water from can) and pre-boiled egg plant and heat. Enjoy!
