Ingredients

    4 serving Jello Instant Pudding Strawberry Creme
    .5 cup Cabot Greek Style Lowfat Yogurt vanilla bean (by RVANSLICE)
    1.5 cup Milk, 2%, with added nonfat milk solids, without added vit A
    3 serving Nabisco Low Fat Nilla Wafers
    2.5 pat (1" sq, 1/3" high) Butter, unsalted

Tips

This recipe would be great topped with fresh strawberries or whip topping


Directions

Use food processor or hand crush Nilla wafers into fine crumbs. Melt butter in microwave and add to crushed wafers. Mix well and press into the bottom of a 9x9 baking pan to form a crust. Set in freezer for a few minutes while you blend the remaining ingredients. Start by mixing the pudding mix and milk, then add the yogurt before the pudding starts firming and keep mixing vigorously by hand or with a hand blender until all the yogurt bumps have been smoothed out. Take the crust from the freezer and spread the strawberry creme mix over the crust. Place in refrigerator for at least 1 hour. I had 3 hours to allow mine to set up, but it would have been ready to cut and serve after about 1 hour.
