1 1/2 cup Bisquick
2 tsp Pumpkin Pie spice
1 tsp Cinnamon
2 tsp Baking Powder
1 cup Pumpkin Puree
2 large Eggs
1/2 cup Applesauce, unsweetened
1/4 cup Pure Maple Syrup
1/2 cup Milk
Tips
Yams or squash work equally well in this recipe. Try adding nuts, chocolate chips, raisins, etc.
May even substitute crushed pineapple for the applesauce.
Directions
350 20-25 minutes makes 12 muffins
Combine dry ingredients, set aside.
In a separate bowl beat eggs. Add milk, maple syrup, pumpkin and applesauce, mix thoroughly. Add to dry ingredients, mix well.
Spray muffin tins, fill 2/3 full
