Low in calories and loaded with veggies, this is a great way to start your day. Low in calories and loaded with veggies, this is a great way to start your day.
Number of Servings: 6


    2 cups Egg Beaters
    1/2 cup low fat cottage cheese
    1/2 cup low fat shredded cheddar
    1 jumbo tomato
    1 package fresh spinach
    6 slices canadian bacon (Thick-cut lean deli ham works well, too)
    1 tbsp minced garlic

    Mrs. Dash (or other no-salt seasoning)


Use a non-stick pan sprayed with Pam, and sautee your spinach with the tablespoon of garlic just so it wilts a little. Pat dry with paper towels and place in a mixing bowl.

Wash and dice your tomato, discarding seeds and stem. Place in mixing bowl.

Dice the canadian bacon. Add to bowl and stir spinach, tomato, and meat together. The cool meat and room-temp tomato will draw the residual heat out of the spinach so the eggs don't cook the second you add them.

Combine all the rest of the ingredients in a mixing bowl. Pour into a (sprayed with Pam) round baking dish. This dish will puff up as it bakes, so be sure it has room to grow.

Bake at 350* F for 60 minutes. Makes 6 servings.

(Note: I like to make one of these on Sunday evenings, and my family eats a slice for breakfast early in the week.)
