Ingredients

    Crust
    1.5 cups Almond Flour
    3 tbsp Butter, unsalted
    1/4 tsp Salt
    1 large Egg, fresh, whole, raw
    1 Tbssp Vanilla Extract

    Filling
    3 tsp Splenda No Calorie Sweetener
    3 large Eggs
    1 cup Splenda No Calorie Sweetener
    3 Tbsp All Purpose Flour (keep in mind if
    Keto, this makes 12 slices)
    1 cup Buttermilk
    1 tsp Vanilla Extract
    1 Tbsp Lemon Juice
    1/8 tsp Nutmeg, fresh
    1/8 tsp Cinnamon
    1 dash Salt

Tips

Only the center should have a slight jiggle, if it's sticky and the whole thing is jiggly, put it back in for a few more minutes.

Keep in mind those 3 Tablespoons of flour are spread over 12 servings, that's 1 carb.


Directions

For the crust, put all ingredients into food processor and process until it forms a ball. Press directly into pie plate, make decorative edge if desired. You can press it quite thin as it will puff slightly when baked. Bake in 350° oven for 8-10 minutes, cool completely.

For the filling, combine all ingredients in a large mixing bowl and blend with hand mixer until nice and smooth. Pour into prepared pie crust and bake 45-55 minutes, until top is golden and only the center has slight jiggle.


Serving Size: Makes 12 slices, serving size 1 piece

    There are 3.3 Net Carbs. You can always sub Xanthan Gum (about 1 tsp) or Coconut Flour (about 2 Tbsp) if you're not comfortable with AP Flour. Also Allulose or Monkfruit Sweetener would sub great for Splenda. - 2/19/20

    A keto recipe should not have 120.6 g. carbs or any regular flour??? - 3/5/18

    Thank you for your comment. I mistakenly had the servings set to 1, as delicious as it is I don't think anyone will eat the whole pie. There are 3 Tablespoons of flour in the whole pie, it is integral to the outcome of the finished product. When eating 1 slice out of 12, it's such a small amount.
