Introduction

Ingredients

    2.0 tbsp Olive Oil
    1.0 cup, chopped Carrots, raw
    2.0 stalk, large (11"-12" long) Celery, raw
    1.0 large Onions, raw
    2.0 cup, cubes Yams
    16.0 oz Ground Turkey - 97% fat free extra lean white turkey
    4.0 serving Baby Bella Mushrooms (3 oz)
    2.5 serving cream of mushroom soup
    1.0 oz Fage 0% Nonfat Plain Greek Yogurt

Directions

Peel potatoes, cube and boil until soft. Meantime saute onions, celery and carrots, pepper and bay leaf with the olive oil until soft. Add mushrooms and cook for a few minutes. Add turkey and cook until browned. Add cream of mushroom soup and heat through, mixing periodically. Pour into glass baking dish. Strain boiled Yams and mash with a fork. Add yogurt and salt to taste. Put mashed Yams on top of turkey mixture and spread evenly. Bake at 350 degrees for 30 minutes. Serving Size: 1/4 of a pan
